Apricot Jam with Pectin Powder

This is the recipe I used from Sure Jell. It is an older recipe but turned out great. I prefer the powder over the liquid
However I use the flash water bath method to peel the apricots. Utah style we do not leave the peel on.
5 lbs apricots to get 5 cups of peeled, pitted, and mashed Apricots
1/4 Cup Lemon Juice
7 Cups White Sugar
1 tablespoon Butter
1 Box Powdered Pectin
