Elevate your Muffins

A boxed mixed is a great way to make muffins or muffin loaf. There are a few easy changes which will elevate your muffins. No one will guess that you used a mix.

Start with you favorite mix. My personal favorite is Lehi Roller Mills (copyrighted).

Follow the directions substitute the oil for melted butter and add 2 tsp of Vanilla extract (preferred Homemade Bourbon Vanilla). Mix. Fold in a pint of washed and patted dry raspberries. With fresh berries make sure you grease your pan well or use muffin liners. Fresh berries when cooked become very stick where they directly contact your pan.

Cook following directions but add an additional 5 minute. Serve hot with butter.
