Fisherman’s Salad

It’s called Fisherman’s Salad because I used my husband‘s Shoepeg Corn which he uses as bait to catch fish. You will love this easy flavorful salad for BBQs, Picnic, Potlucks, etc...


1 can Black Beans (rinsed and drained)

1 can Kidney Beans (rinsed and drained)

1 teaspoon garlic, minced

1/2 of a large Bell Pepper, diced

2 Tomatoes, diced

3 Green onions, sliced including 2/3 of the greens

1 can Black Olives, sliced

1 can Shoepeg Corn

1 large Lime, juiced

1 Tablespoon Olive Oil

2 teaspoons Red Wine Vinegar

Fresh Ground Pepper

1/2 teaspoon Salt

1/2 teaspoon Garlic Powder


Place beans, bell pepper, garlic, tomatoes, black olives, and corn in a bowl. Stir to combine. Drizzle lime juice, olive oil, and red wine vinegar over mixture. Stir to coat. Sprinkle black pepper, salt, and garIic powder over mixture. Stir one more time and place in refrigerator until serving.
