Make a special meal for everyone; Game Hen the single serve entree

If you need a single serve entree a Game Hen is perfect. My daughter has food restrictions due to some health issues so as we made Prime Rib for everyone else I needed an alternative for her Christmas entree so I decided on Game Hen. They are the perfect single size for one person. They also make a great seasonal meal.
Christmas Game Hen
Game Hen
Casserole dish
2 Celery stalks
1 small Onion or 1/2 of 1 large Onion
1 handful of Baby Carrots
Cooking Wine
1 Lemon, quartered
Olive Oil
Seasoning
Preheat the oven to 375 degrees. In a casserole dish put rough chopped celery, onion, along with the handful of carrot, and lemon quarter. Reserve a lemon quarter per Game Hen.
Clean and rinse the Game Hen. Place on plate and pat dry. Place a lemon quarter in the cavity. Drizzle with Olive Oil and rub the Game Hen to evenly spread it In the hen.
Sprinkle with Seasoning. You can custom make your own rub or use premixed rub or seasoning like lemon pepper, chicken rub, winemakers rub.
Place chicken on bed of vegetables and add some cooking wine to vegetables for moisture. About 1/4 cup.
Cover with aluminum foil and roast for 40 minutes. Uncover and finish roasting for additional 25 minutes.
Plate and serve. Scoop some of broth from bottom of dish and drizzle over Game Hen and on plate.
