Prime Rib leftovers

Christmas like other holidays has more food than can be eaten in one meal. However my family doesn’t like Leftovers normally so instead of leftovers we see it as an opportunity to make a new meal.


We make Prime Rib into steak and everything sandwiches or quesadillas. They are great together for families who want choices or chose one type of sandwich, whichever works for you.

4 Peppers, sliced

1 large Onion

8 mushrooms sliced(optional)

1/2 teaspoon minced Garlic

2 pounds leftover Prime Rib

Cheese:

Swiss Cheese or Provolone, sliced

Sourdough bread leftover from white cap stuffed mushrooms.


Sauté onions, garlic, and peppers in pan until cooked. Season with seasoning salt. In a separate plan reheat sliced Prime Rib. Toast the sourdough bread in the toaster then place on a plate. Add Swiss cheese to cover. Place vegetables on one side and meat in the other. Put together and cut in half. Enjoy!!


Quesadilla


Same ingredients as above except two flour tortillas Per quesadilla instead of sourdough bread. Cook meat and vegetables the same as above. On a heated griddle melt butter. Place a tortilla and cover in cheese. Add cooked vegetables and reheated meat. Add more cheese on top and the second tortilla. Flip the tortilla and toast on each side. Place on plate and slice to serve.
