Short-cut to decadent Carrot Cake

Most people use a cake mix as a fast, easy way to make a cake. It is a great way to make a cake , but don’t be afraid to step up your game and use the cake mix as a jumpstart to a decadent cake.

By adjusting and adding a few items to the cake mix you can improve it to where no one would ever think it started with a cake mix.


My carrot cake adjustments.


In a pot place

1/4 Cup Raisins

1/4 Cup Rum

1/2 Cup Water

Boil over Medium heat until the water has rehydrated the raisins. Turn off heat and let sit to cool.

In a bowl place

1 Carrot Cake Mix

1 Cup Shredded Carrots

Rehydrated Raisins

Mix together and coat the carrots and raisins In cake mix. The coating will keep the carrots and raisins from settling to the bottom. Add 1/3 Cup melted Butter, 1/4 Cup Rum, 1/2 Cup Water, 3 Eggs to cake mix. Stir to incorporate.

Pour into cake pan prepared by coating surface with shortening and sugar. Spread evenly.

Cook following directions on the box.
