Waffles

This recipe will create light and fluffy waffles every time. I used an old recipe book from the early 1900's to create this recipe. I was able to combine the best of three recipes. I inherited this recipe book from my grandma and it is still my go to book for cooking.
2 cups Flour
1 1/2 teaspoons Baking Powder
2 teaspoons Sugar
1/4 teaspoon Salt
1/2 teaspoon Baking Soda dissolved in 1 Tablespoon of hot water
1 1/2 cups Sour Milk (Milk with 1 cap of vinegar added)
1/4 cup Butter, melted
3 eggs, separated
1/4 cup Water
In a bowl combine Flour, Baking Powder, Sugar, and Salt. Mix to combine evenly then create a well in the center. Take the Egg Whites and whip until they become light and fluffy like a meringue; set aside. Pour Sour Milk, Egg Yolks, and dissolved Baking Soda in the well created in the dry ingredients. Stir to combine add butter and water. Stir the minimum amount needed to combine. Fold in Egg Whites.
Preheat the waffle iron. Add batter to the waffle iron and cook to your desired crispness.
Serve with maple syrup, fresh fruit syrup, chocolate frosting, berries and whip cream, powdered sugar, with fried chicken, the topping ideas are endless.
