This is a Colton‘s recipe for the Marinade and smoking of Elk back straps.

This recipe is small adjustments off of an original recipe from Realtree Outdoors.

Marinade

1 Lime, zested and juiced

1/2 Cup Whiskey (Mama stash)

1/2 Cup Brown Sugar

1/3 Cup Soy Sauce, Low Sodium

2 Teaspoons Garlic Powder or minced Garlic

Place all the ingredients above in a bowl and stir. Include the lime halves after juiced. Place elk back straps in a dish and pour the marinade over. Add additional water to ensure the elk meat is covered completely.

Marinate for 4 - 8 hours.

Remove from Marinade and place on smoker for 30 minutes with Reserve blend.

Turn up to 350 degrees for 15 minutes to achieve medium rare.

Cut and serve.
